CMC stands for carboxymethyl cellulose. The more correct name is the sodium salt of carboxymethylcellulose, it is a derivative of cellulose. Unlike ordinary cellulose, it is soluble in water through chemical reactions. Solubility in water is achieved by the introduction of carboxymethyl groups along the cellulose chain, which makes hydration of molecules possible.
