Vacuum cutter L23-FKV-03 with a bowl capacity of 325 liters is intended for mixing and grinding under vacuum the components of minced meat in the production of all types of sausages, sausages and anchovies.
Principle of operation: Raw materials (
beef) are loaded into the L23-FKV-03 vacuum cutter with the lid open and the knife shaft and bowl rotating in mixing mode. At the same time, the necessary components are added. Then the lid is closed and vacuuming is carried out. The rotation of the knife shaft is transferred to the cutting mode. The number of revolutions of the knife shaft and the temperature of the minced meat are displayed on the information board.
When the end points are reached, the grinding process stops, the vacuum is “reset,” and the lid is lifted. Then the pork, spices, ice or water are loaded, the bowl and the knife shaft rotate in the mixing mode. At the end of the loading process, the lid is lowered, the bowl is vacuumed, and the final grinding process takes place. Minced meat is loaded with a disk unloader in a cart.
For the preparation of minced meat of structural sausages, the knife shaft has the possibility of reverse rotation, i.e. the knives rotate counterclockwise on the back (blunt) side.
