Principle of operation:
The product is loaded through a receiving hopper, then enters a rotating drum. Centrifugal force presses the product against the inner part of the drum. The first knife (cutting blade) cuts the product into slices, the size of the output hole regulates the size of the output product. Next, the product enters disc-shaped blades, which cut it into bars. The size of the bar depends on the distance between the blades in the block. If the product has a fibrous structure, it is recommended to use a disc knife with serrated blades (except for the 3 mm slicing size). The third knife cuts the product into cubes. If this knife is dismantled, the form of the original product will be a bar. The sliced product enters the container for finished products through the unloading chute.

For slicing of soft products (tomatoes, kiwi, strawberries, etc.) and for some rather hard products, it is possible to supply water at the time of slicing to reduce damage to the product:
• for a soft product, in this case, the shape of the cut is preserved, preventing damage to the product.
• for a solid product, water helps to prevent it from scattering (reduce the "flour" factor during cutting), and also increases the service life of the knives.

Two types of knives are possible: a disc knife with straight blades and a disc knife with saw blades (for a product with a fibrous structure).
