Vegetable purslane, also known as garden purslane (Portulaca oleracea), is a plant that is often used both in cooking and in folk medicine.
Purslane is pleasant to the taste: juicy leaves are fragrant and slightly reminiscent of lemon. Purslane crunches like a young cucumber, and its stems are slightly sharp. The leaves and upper young parts of the shoots are used for food, which are cut before flowering, because after flowering the leaves become rough and are not suitable for consumption, both raw, boiled and stewed.
Purslane goes well with first courses, vegetable salads and spicy sauces. In addition, purslane is marinated and salted for the winter. Didn't know?

Now purslane is valued due to the fact that a lot of useful substances were discovered in it, among which vitamin C and Omega 3 are the leaders, it is even called "fish plant" (pesce vegetale).
The high concentration of vitamin C and polyphenols present in purslane give this plant high antioxidant power. The aerial part of purslane contains proteins, sugars, microelements (zinc, copper, manganese, nickel, iron), macroelements (calcium, magnesium, sodium, potassium), organic acids, alkaloids, saponins and other glycosides, norepinephrine, a significant amount of vitamins - carotene, tocopherol, ascorbic acid (up to 0.3%), nicotinic acid and phylloquinone, mucous and resinous substances. The seeds are a fatty oil, which includes linoleic, oleic, palmitic and other fatty acids.
Purslane contains a very high concentration of alpha- and gamma-linolenic acids - several times more than spinach. The leaves of the plant contain carotenoids, which synthesize vitamin A in the human body. You can often hear how this vitamin is called the "beauty vitamin" because of its effect on the condition of the skin, as well as on vision. The human need for vitamin A is 800 mcg per day, and purslane contains 65 mcg per 100 grams. Purslane leaves contain ascorbic and nicotinic acids. Ascorbic acid is useful for the immune system, and nicotinic acid is responsible for the regulation of all metabolic processes in the human body, especially useful for lipid metabolism.
In ancient Egypt, dandur (purslane) was considered a healing plant (its leaves and stems were added to food), and in ancient Greece - a medicine. Avicenna revered purslane and considered it mandatory to use, as it is one of the most effective natural medicines. Pliny the Elder also knew about the benefits of purslane and used it widely in his practice, and Hippocrates called it a "blessed" plant.
Purslane helps in the treatment of many diseases:
to restore the level of cholesterol and glucose, with neurodermatitis and psoriasis, with inflammation of the genitourinary system,
