Description

The test analyzer Extensograph is intended for determining the parameters of test stretching in different periods of fermentation. The resistance of the test to stretching and the ability to stretch in certain time intervals are important parameters that determine the bread properties of flour. Retention by the test of carbon dioxide, formed as a result of fermentation with the help of yeast, is related to the ability to stretch and resistance to stretching. Test samples weighing 150 g each are stretched by means of a special hook after 45, 90, and 135 minutes of proofing, respectively. The device for forming the dough, as well as the stretching hook, are controlled via the touch screen. With the help of built-in software, calculations are made to estimate the schedule. The graph is saved in the computer in PDF format.
