Royal oyster mushroom, almost the most delicious mushroom among oyster mushrooms, as its name suggests. Royal oyster mushroom is popular in Europe. It is a fleshy dense mushroom, it is easily grown and grows well on hard wood.
The cap is 3–12 cm in diameter, in young mushrooms it is round, convex, expands with age, becomes similar to a funnel, the edges of young mushrooms are turned inward, with age the edges unfold.
Leg. 3–7 cm long, thick, located in the center, tapering downwards.
Useful properties. The royal oyster is close to
white mushroom and is not inferior to this leader in terms of useful properties. Fruit bodies contain up to 35% protein, a full set of essential amino acids, vitamins and enzymes that contribute to better digestibility of food. In addition, this mushroom by its very nature is protected from the accumulation of harmful substances, does not contain salts of heavy metals, but is able to remove them from the human body, and the high protein content (up to 47.7%) helps prevent many diseases and increase immunity.
Taste and preparation. They are usually fried until the edges become brittle (crispy) and turn golden brown. Tasty, spicy, dense mushroom (requires prolonged chewing). This mushroom, like other oyster mushrooms, goes well with Italian dishes, especially with meat (lamb, piglet) and fish.
